Received this recipe from my Aunt. Easy and quick, also freezes well so you can make several days in advance. Kid friendly!

Ingredients
6 chicken breasts, boiled and cut up
1 can cream of chicken soup
1 C. sour cream
1/2 C. chicken broth
2 rolls Ritz crackers, crushed
1 stick butter
poppy seeds
Directions
Mix cream of chicken soup, sour cream and chicken broth in bowl. Add cut up or shredded chicken. In separate bowl, melt butter and mix with 2 rolls of crushed Ritz crackers. Lightly grease 9×12-inch Pyrex dish. Pour in chicken mixture then top with buttery Ritz crackers. Sprinkle generously with poppy seeds. Bake at 350 degrees for 30 minutes.

Ingredients
2 Tbs. olive oil
2 lbs. chicken pieces, skinless
1 lb. boneless pork, cut into 1-2-inch pieces
1/2 lb. fresh or frozen (and thawed) fish fillets
salt and freshly ground pepper to taste
3 garlic cloves, minced
2 med. onions, chopped
1 each: red, yellow and green bell pepper, diced
1 jalapeno pepper, seeded and minced
1/4 C. chopped cilantro (plus extra for garnish)
1/4 C. fresh parsley, chopped
1 lb. ripe tomatoes, peeled, seeded and chopped
1 qt. chicken broth
1 1/2 C. long grain white rice
1 Tbs. chopped fresh oregano

Under Creamy/Cheesy+ Rice
I found this recipe in a newspaper many years ago. It has been a favorite of my family ever since. With the holidays coming it is a great way to use up leftover turkey, chicken or ham.

Ingredients
1 C. cooked rice
2 C. diced cooked chicken, turkey or ham
1 C. cream of chicken soup
1 C. diced celery
3/4 C. mayonnaise
3 hard-cooked eggs, chopped
1 Tbs. grated onion
1 Tbs. lemon juice
1/2 tsp. salt
1 C. buttered corn flakes
Directions
Combine all ingredients except corn flakes. Place in 2 qt. casserole. Sprinkle corn flakes over top. Bake in preheated 350 degree oven for one hour or until heated through. Serve immediately.

Salt
Black pepper
Garlic
1-2 can(s) cream of mushroom soup
Milk
Directions
De-fat and wash chicken. Lightly season both sides of chicken with salt, pepper, and garlic. Pour can of mushroom soup into medium bowl. Refill can with milk, and add milk to bowl. Lightly season soup mixture with salt, pepper, and garlic. Stir until well mixed.

Ingredients
4 skinless, boneless chicken breast halves
1 can (10 3/4 oz.) cream of chicken soup
1 ½ C. water
¼ tsp paprika
¼ tsp pepper
1 ½ C. white rice, uncooked
2 C. fresh or thawed frozen broccoli flowerets
Directions
In skillet over med-high heat, in 1 Tbs. hot oil, cook chicken covered 8 min. or until browned. Set aside. Pour off fat. Add soup, water, paprika and pepper. Heat to a boil. Stir in rice and broccoli. Place chicken on mixture. Cover and cook over low heat 5 min. or until chicken is done. Stir.

Very good for home or carry out, if you like cabbage you will love this, can be spicy or mild. I got this from a good friend and revised it a bit from his. Also good Weight Watchers dish if following their plan, this is about 7 points for 1 3/4 C. per serving.

1 pkg. each taco and chili seasoning

1 small can tomatoes with green chilies

4 boneless chicken breast halves
1 10 3/4 oz. can Campbell’s Broccoli Cheese or 98% Fat Free Broccoli Cheese Soup
1/3 C. milk
4 C. hot cooked medium egg noodles
Chopped fresh parsley
Directions
Place chicken in 2-qt. shallow baking dish. Mix soup and milk. Spoon over chicken and bake at 400 degrees for 20 minutes or until chicken is done. Serve with noodles and garnish with parsley.
